After Devansh turned one, I made several futile attempts at feeding him eggs. I started by giving him boiled eggs because that’s what most parents do and pediatricians advise. But Devansh didn’t like boiled eggs one bit; he just refused to eat it. Now I realize it’s because he found it bland. Because the other day I was eating an omelette which had green chilies and some black pepper powder added on top. As he often does these days, Devansh demanded that I give him what I’m eating. I decided to take a chance and give him the omelette even though it was quite spicy. And my boy liked it. He kept asking for more omelette.
That’s when I decided I should try giving him my Indianized version of French toast, which is one of my favorite egg dishes. It was a risk as Devansh doesn’t like bread because of its spongy texture. He did eat my French toast but not as much as I would have liked him to. He had 3 pieces and then he had one more because I coaxed him to but after that he put his foot down or should I say clamped his mouth shut and turned his head away. :-) I think I’m going to wait till he starts liking bread and then I’ll try again. Meanwhile, if your kid likes bread and eggs, do try this recipe. If you’re making this toast for yourself you can add some chopped green chilies. I’d recommend using bread which doesn’t contain refined flour, such as multigrain or whole-wheat bread. I used Foccasia bread which is available with my local grocer. This one had garlic as well as herbs in it and was really yummy. Well, go ahead, try my recipe and let me know if your kid enjoyed this Indian French toast.
Indian French Toast Recipe with Coriander, Green Chili, and Cheese
Ingredients
- 1 egg
- 1 slice of Foccasia or multigrain bread
- 1 tbsp chopped coriander
- 1 green chili finely chopped (omit this for toddlers and small kids)
- 2 tsp milk
- Pinch of black pepper powder
- Half tbsp oil
- 1 cube of cheese grated
- Salt to taste
Instructions
- Break an egg in a wide bowl and whisk it using a fork.
- Add milk, salt, black pepper powder, and again whisk it lightly.
- Add chopped coriander and mix it well with the egg mixture. You can also add chopped green chili if you are making this French toast for grownups.
- Cut a slice of bread in 9 equal pieces. (For older kids, you can cut the slice in fewer pieces.)
- Heat a non-stick pan and add oil. It’s preferable to use olive oil. If you don’t have olive oil you can use any cooking oil.
- Dip the bread pieces in the bowl one at a time and let them soak the egg mixture. You need to ensure that they’re coated with the egg mixture from both sides.
- Place the bread pieces on the pan. You should keep the pan on low flame.
- After the bread pieces turn light brown, turn them over and add grated cheese on top.
- Cover the pan with a lid.
- Turn off heat after the other side too turns light brown.
- Add some tomato ketchup on top of the pieces before serving.
This has been my lil one's fav for quite sometime now. Its yummy!!
And here I was thinking this was my invention :-) I’m not too crazy about the conventional French toast with sugar n stuff so I’d tried adding chilies n coriander…I used to eat this pretty frequently earlier when weight was not an issue…don’t cook such cheesy stuff for myself at home these days…
I love eggs…& this recipe is my fav… I sooo want lv to eat & relish them.. ..though the savoury egg toast didnt quite worked with Lv yet.. guess I should try the traditional sweet frenchies with her :)!>..
Yeah maybe she will like the sweet french toast better…Devansh doesn't like bread and he's not too keen on sweet things so I think I'll have to hold off till he cultivates a taste for bread. Btw read ur teething biscuits recipe..the biscuits look yummy :)
