Despite my promise in the last post that this month I’ll post recipes frequently, I’m posting the next one after more than two weeks. I did say no more excuses, but please allow me to make some…it’ll help me vent a bit :-p House getting painted from outside, Devansh becoming super clingy of late, conked off comp…there I feel much better now :p Now that I’ve got that out of my system, I’ll proceed to the next guest post and this one is a first on my blog—a guest post from a fellow blogger, Priya Sachan. Priya stays in Bangalore and has a three year old adorable daughter, Aanya.
Priya contacted me before my Goa vacation asking if she could contribute a guest post. I was really touched by her gesture considering she could very well have written this recipe for her blog, Shishuworld. I asked her to send it to me after a few days as I was out on a vacation. And after some days she did send it—mouthwatering and super healthy recipe, neatly written and accompanied with a great pic. Thank you so much Priya. :-)
I have a lot to learn from Priya when it comes to blogging. She posts frequently, she interacts with fellow bloggers, and her blog’s truly delightful. If you haven’t taken a look at it yet, I suggest you do so now. It has very useful and interesting articles for expectant and new parents—actually parents of toddlers and older kids too. From here onwards I’ve retained what Priya wrote:
“These are simple pancakes with goodness and color of beetroot. These are special for us because my daughter insists on mixing the batter herself. I give her a whisk and add ingredients one by one and she mixes them to a smooth batter. It is amazing to see the joy on her face every time the batter turns pink. Needless to say, she loves having them. These are a good change from regular rotis and can be had not just for breakfast but also for some other meal.“
Mini Beetroot Pancakes Recipe
Ingredients
- ½ cup wholewheat flour atta
- 1 egg
- 1 beetroot finely grated
- 1-2 tsp honey
- ½ cup Milk
- Oil/butter
Instructions
- Mix together flour, egg, and honey and whisk together so that there are no lumps.
- Add beetroot and mix well.
- Add milk gradually to get a batter of pouring consistency, but it should not be runny.
- Heat a frying pan and grease using some oil or butter.
- Pour a small ladle of batter and cook till small holes appear.
- Flip and cook on the other side.
- Serve drizzled with honey.
